Brownies with caramel in the center.
From scratch.
Just because.

and they're good.

And I'm the only one who will be around to eat them.

I need to write more.
a LOT more.

Horrendous storm rolling through.
Lightning is insane.

But I'm lonely ... so I'm checking around.
The rain is just now starting... swinging so hard that the house is shaking.

This is for the cakeier kind of brownies, not the fudgey kind.

Brownies:
3 oz. unsweetened chocolate
1/2 cup salted butter, softened (you can use margarine too)
4 large eggs
1 1/2 cups white sugar
1 Tbsp vanilla extract
1 1/2 cups all-purpose flour

Caramel:
1/4 cup salted butter
1/3 cup dark brown sugar, firmly packed
2 Tbsp light corn syrup
1 Tbsp whipping cream.


preheat oven to 325°, grease a 9x9 baking pan.

In a small saucepan melt chocolate and 1/2 cup butter over low heat, stirring constantly. Remove from heat.

Beat eggs in a large bowl using an electric mixer set on high speed until they thicken slightly. Add sugar slowly. Add vanilla and mix well. Add chcolate-butter mixture, beat on medium until uniformly colored. Add flour blending at low speed until *just* combined, don't overmix.

Pour half the brownie batter into pan, bake 15 -20 min or until top is firm.

To prepare Caramel: heat butter, sugar and corn syrup in heavy pan over medium heat, stirring constantly until sugar dissolves. Increase to high and boil 1 1/2 min.

Remove from heat, stir in cream, keep warm. (just setting it on the warmish stove top is enough. If you leave it on the burner it stays *too* warm and you'll have a mess)

Spread warm caramel evenly over top of baked brownie layer. Pour remaining half of brownie mixture over caramel, smoothing the top.

Bake an additional 25-30 min or until toothpick inserted in the top later comes out clean.

Cool brownies in pan, cut into squares.
You can chill them and serve them that way too.

i suppose this would not be the appropriate time to tell you how, at age nine, i concocted something my brothers still refer to as "caramel bullets."

perhaps now, eons later, i shall have better luck :-)

it's so very very simple you don't realize it's caramel at all until you're done.
Feels like .. there should be more steps or a candy thermometer involved or something.

then there's hope for me after all. i didn't fully grasp the whole "candy hardens" concept at nine. destroyed a few pots and my ego all at the same time...::sigh::
