(this is a basic buttermilk pancake recipe. It's really good plain and it's really good with whatever lil thing you want to add. In fact, using half the flour and making up the difference in buckwheat flour makes a really really good buckwheat pancake)
1 cup buttermmilk
2 tbsp melted shortening (or oil)
1 cup flour
1 tbsp sugar
1 tsp baking powder
1/2 tsp salt
1/2 baking soda
1/2 - 1 cup blueberries (fresh or rinsed and well drained frozen)
Beat egg with whisk.
Add all ingredients one at a time as listed until everything is combined and batter is smooth.
Gently stir in blueberries.
drop by 1/3 cup fulls ( I actually use a measuring cup, but you can just ... make them the size you like) on hot (low-medium or about 200 degrees) griddle/large pan/electric skillet. If you're not using a griddle, a lil cooking spray is a good idea to make them easy to move.
cook until they're full of bubbles and edges start to look a lil solid and less shiney.
Flip them and cook for another couple minutes.
